Regional Cooking Sauces
Think of these as fiery flavour concentrates from different regions of the world that can be used as the basic flavouring for a meal, or as a flavour and fire booster to augment other dishes. Original is the hot chilihead version, Junior has the same intense flavour, but is for milder palates. Whichever you choose, start by using a single Tablespoon per person. All these flavours have grown out of much research, experimentation, desire and travel, and have appeared in my restaurant The Appletree Landing and my two cookbooks The Book of Feasts, and Worldwind Tour for Two.
Experiment with them, and have fun! If you cant get to the mountain, bring the mountain to you!
