Starting at:

First I take fresh ginger root and cut it into little tiny cubes which are then thrice cooked in successively richer syrups, with time honoured cooling in-between the candying. I then take ripe fresh mangoes, sweet Bermuda onions, fresh garlic and hot chili peppers and a blend of mixed tropical spices, cooking eternally until it begins to caramelize. Designed to temper the heat of, and provide contrast for a hot meal.

Serve as a side to that spicy meal to help cool the palate between bites.

Drizzle over fresh goat cheese or cream cheese on whole wheat crackers for a healthy sweet snack.

Spread on toast for breakfast.
