The recipe for each of the mashes is identical, the only thing that changes is the variety of fresh pepper in the recipe. Available seasonally.
“Traditional mashes are the mother of all hot sauces, and are usually available on a commercial scale made with heavy sodium (over15% salt) and strong vinegar. In contrast, Pepperfire Mashes use pure, fresh, hand-slected ripe peppers that are mashed with fresh lime juice and Kosher sea salt. This allows the true flavour and heat level of the individual peppers to stand alone. A photo of the actual peppers used to make a batch appear on every label.”
Use at the table as a fresh condiment, or as a marinade.
